Hebbo Bistrot

Hebbo Bistrot is a modern interpretation of Alpine tradition, merging local craftsmanship, panoramic views, and immersive interiors beneath a dramatic timber vault on the shores of a Dolomite lake.

Hebbo Bistrot is a contemporary architectural addition to an existing lakeside resort in the heart of the Dolomites, a UNESCO World Heritage Site. Conceived as a modern interpretation of Alpine building tradition, the structure stands alongside two timber buildings that host the reception and shop—clearly distinct in form, yet sensitively connected in purpose.

Externally, the new volume asserts its autonomy through a clear, cubic shape clad in horizontal wooden panels. It avoids imitation, instead embracing simplicity and precision. An annex, tucked behind the existing buildings, gently guides visitors toward the bistro’s entrance. Inside, the architecture undergoes a quiet transformation: sharp lines give way to soft curves, as a sweeping wooden vault rises from floor to ceiling, enveloping the space in warmth and texture.

Full-height sliding windows open the main dining room to the lake, dissolving the boundary between interior and landscape. A double-sided fireplace separates the seating area from the bar, framed by an integrated wine display that conceals the kitchen behind. The material palette is anchored by natural wood and a deep petrol green—a nod to the color of the lake—used throughout in tiles, upholstery, and finishes.

The project also includes a discreet underground extension housing technical rooms, storage, restrooms, and a secondary wine cellar, all connected by an elevator.

Hebbo Bistrot offers a complete spatial experience, welcoming, tactile, and connected to both place and tradition. It is not only a place to dine, but to feel embedded in the cultural and natural richness of the Dolomites, where modernity and memory meet.
